Herby, Lemony, Garlicky Roasted Whole Fish by Chrissy Teigen (Slightly Modified)

I love to cook and I love trying new recipes. Because of this I am a cook book fiend and the Craving’s collection by Chrissy Teigen is one of my favorites. I have tried almost every recipe from “Cravings: Recipes for All the Food You Want to Eat” (click on the title to learn more about the cookbook) and recently tried the Herby, Lemony, Garlicky Roasted Whole Fish recipe (page 190) using Striped Bass. I didn’t follow the recipe exactly just because I love to add ginger and other herbs and spices to fish. However, it was absolutely delicious. Her other cookbook is titled “Cravings: Hungry For More” and can be purchased at this link. Each cookbook is roughly $20 and well worth the price. I own a lot of cookbooks and Chrissy’s by far are my favorite because her recipes are easy to follow and don’t require a lot of expensive ingredients like most cookbooks. Plus her commentary is hilarious.

Things You’ll Need:

2 pounds whole striped Bass (with head)

20 cloves garlic, blended

3 tbsp ginger, minced

2 tbsp shallots, finely chopped

2 lemons, sliced

3 tomatoes, sliced or cut into wedges

1 1/2 tbsp kosher salt

1 1/2 tbsp ground black pepper

1 tbsp chilli powder

1 tsp red pepper flakes

Herb sprigs of rosemary, thyme, sage, chives

4 tbsp olive oil

How To Make It:

1. Heat oven to 425°C

2. Rinse fish with warm water and pat dry with towel. Place fish on a lined baking sheet. Season each side of the fish with salt, pepper and chili powder

3. Place 3 or 4 slices of lemon and tomato plus 4 chives under each piece of fish

4. Combine ginger, garlic, red pepper flakes, shallots, and olive oil in small bowl

5. Rub mixture over the entire piece of fish including along the cavity. I did it on both sides even though the book only calls for one side

6. Place lemons, tomatoes, herb sprigs inside the cavity of each piece of fish

7. Put remaining slices of lemons and tomatoes on top of each piece of fish

8. Bake for 30 minutes
